About local Cheese:

For many years, in south of the country a kind of cheese has been produced by non- pasteurized milk in south of the country in which the rennet was added immediately after milking and entered into salt water after clotting. It was largely popular untill it was found that Malta fever and tuberculosis pathogens are transferred through raw milk and are removed easily through pasteurization heat. Therefore the consumption of the cheese made by traditional methods is not recommended. Ramak local cheese has the same taste but with no risk of dangerous diseases being spread.
